Lesson #143: Strawberry Rhubarb Pie

Last week at the farmer's market, both strawberries and rhubarb were readily available. It wasn't too warm in Ohio, so I had the perfect excuse to make this SUMMERY pie.

I love the combination of tart rhubarb and super-sweet strawberries along with a touch of cinnamon. Combined with a perfectly golden, flaky, and uber-buttery crust, this pie is DELICIOUS!


LESSON LEARNED: Place your pie plate on top of a baking sheet in the oven. If you happen to over-fill your pie (like I do!), the bubbling fruit filling won't make a mess in your oven!

Lesson #135: Strawberry-Rhubarb Crisp

Justin's favorite desserts are anything made with rhubarb. Since it was his birthday a few weeks ago, I made this dessert as part of his birthday dinner.

The filling reminded me of the best strawberry-rhubarb jam that I've had. The filling was tart, yet sweet and it was topped off with crunchy bits of brown sugar and oatmeal. I made a half batch since it was just the two of us, but we could have easily ate the full batch. Usually I don't regret only making a small batch of something (because I like to try new recipes!), but to be honest, I was a little sad when we finished up the pan of this dessert. :)


LESSON LEARNED: Make sure you bake this for the entire hour - I love how the top gets crunchy and crisp. Maybe that's why it's called a crisp!!!

Lesson #120: Rhubarb Crumb Cake Muffins

Justin LOVES, LOVES, LOVES rhubarb, so I'm sure there will be no shortage of rhubarb recipes on my blog. Since I was in the breakfast mood this week, I decided to make rhubarb muffins with a crumb cake top. These were so good that I had to freeze some of them so we didn't eat them all in one day!

The cake is fluffy, tangy buttermilk cake with a ton of diced rhubarb. It isn't too sweet because the crumb topping is a mixture of brown sugar, flour, cinnamon, ginger, and melted butter. The muffins take a bit longer than cupcakes to bake, so I would recommend checking them often. You would hate to under-bake these muffins because the rhubarb would be soggy in the middle.

LESSON LEARNED: Place a liberal amount of the crumb topping on the muffins before they bake. Some of it sinks into the muffin so it will look pretty bare if you don't use enough.
