Lesson #186: Hot Buttered Soft Pretzels

Last week I had a crazing for one of those buttery, hot, soft pretzels you can get at the mall. Since I wasn't going to make a special trip to the mall, I decided to look around the internet to find a good soft pretzel recipe. I knew I could trust a source like King Arthur flour, so I went ahead and tried this recipe. The finished product tasted just as good (maybe even a little better!) and saved me a trip to the mall. Here's the finished product with some step-by-step photos along the way.


 First, add all the ingredients to the bottom of a mixing bowl.


Knead with the mixer or by hand until the dough looks smooth.


 Place the dough in a zip-lock bag.


 Let it rise until doubled.


Divide the dough into 8 sections.


 Roll each into a log and let sit for a few minutes.


 Stretch out the dough and twist into a pretzel shape.


Give the pretzels a two minute bath in a baking soda/water mixture. This is what helps them brown.


Sprinkle generously with salt before baking.


Bake until golden brown and brush with lots of butter while warm.


Wait a few minutes and enjoy! I took a break from grading papers and read a magazine!

LESSON LEARNED: These pretzels are best served warm. Especially straight from the oven

Lesson #145: Cookie Dough Pretzel Bites

What is better than chocolate chip cookie dough frosting sandwiched between two salty pretzels dipped in milk chocolate and covered with sprinkles? Nothing, I'd say!

This is the perfect summer dessert because it doesn't need to bake and can be whipped up with very little time & effort. I love the combination of sweet and salty and I've been OBSESSED with sprinkles lately.

In fact, I made these treats for my summer intro to psychology class after they took their first exam. I think I said something like "Sprinkles make everything better, so don't stress about how you did on the exam". My students probably like I'm crazy! :)

LESSON LEARNED: Don't want to mess with the hassle of sandwiches? Make the cookie dough frosting and use it as a dip for the pretzels. I took some to my family and it was a big hit with kids!

Lesson #125: Caramel Easter Popcorn

I really love my usual caramel corn recipe, so I didn't know how this caramel corn recipe would measure up. I was a little skeptical because you didn't bake the caramel corn and you mixed in mini-marshmallows into the hot caramel to create a gooey-caramel mixture. On top of that, I planned to make it a day before I served it, so I wasn't sure if it would taste stale after sitting around.

Well, it turned out to be super YUMMY I would say it's a cross between caramel corn and rice krispies treats, but that's not a bad combination in my book. I love the saltiness that the crushed pretzels add and the touch of chocolate from the M&M's. And yes, it still tastes good if you make it ahead of time!

LESSON LEARNED: After the caramel corn has cooled, break it up into small pieces so it's easy to grab a handful from a bowl.

Lesson #56: Blondie with Peanut-Pretzel Caramel

These cookie bars slowly grew on me after I made them yesterday. They are pretty messy to try cut, and at first, I was turned off by this. I would describe them as breaking apart better than evenly cutting apart. Even though they aren't the prettiest dessert I've made, these bars are surprisingly ADDICTIVE.

First, there is a layer of gooey brown sugar blondie. Then, peanuts are roasted in the oven, mixed in with pretzels and tossed with a homemade caramel. This mixture is generously poured over the blondies. The result is a salty & sweet dessert with multiple textures from the blondies, peanuts, and pretzels.

LESSON LEARNED: Messy desserts taste good too!
